Recipe: California Stuffed Chicken (Avocado and Quinoa)
Ingredients:
  • 1/2 Cup Quinoa
  • 1 Ripe Avocado
  • 1 Cup Chicken Broth
  • 1.5 pounds of large chicken breasts
  • 1 eggs
  • 1 Cup of Hazelnut Meal
  • 1 teaspoons of Paprika
  • 1 teaspoons of Black Pepper
Directions:
1. Prepare the Quinoa by adding to boiling chicken broth, reduce to simmer and cover until soft (about 12 minutes). Remove from heat, fluff, cover and let sit for 15 minutes.

2. Cut each chicken breast as shown below and stuff with the cooked quinoa and 3 to 4 slices of avocado.

3. Beat the eggs and then dip each stuffed chicken breast in egg .

4. Mix the hazelnut meal, paprika, and black pepper. Coat each chicken breast in this mixture. 

5. Bake on a greased cookie sheet for 30-40 minutes at 375 degrees. (Cooking time may vary, so be sure to check that the chicken is cooked thoroughly.)

6. Cool and serve.  Serve with extra slices of avocado.

Recipe: Hazelnut Crusted Chicken Cordon Bleu with Brie
Ingredients:
  • 2 large chicken breasts
  • 1/2 cup Hazelnut Flour
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Fresh Ground Black Pepper
  • 1 egg
  • 2 slices of ham (approximately 1/4" thick)
  • 4 slices of brie (approximately 1/4" thick)
Directions
1. Cut chicken breasts open and stuff each with one slice of ham with two slices of brie.  Secure shut with toothpicks.

2. In a medium size bowl, prepare the coating mixture by mixing the 1/2 Cup of Hazelnut Flour, 1/2 teaspoon of Paprika, and 1/2 teaspoon of Fresh Ground Black Pepper. Set aside.

3. Beat the egg.

4. Dip each stuffed chicken breast in the egg and then coat thoroughly with the coating mixture from step 2.

 6. Bake on a greased cookie sheet for approximately 40 minutes at 350-degrees.

 7. Cool and serve.

Recipe: Easy Oven Baked Carrots
Ingredients:
  • 1 pound of baby carrots
  • 1 Tablespoon of olive oil
  • 1/2 teaspoon of salt
  • 1 teaspoon of freshly ground black pepper
Directions:
1. Preheat the oven to 350-degrees.

2. Add all of the ingredients to a mixing bowl and stir by hand until the carrots are evenly coated.

3. Pour the carrots onto a cookie sheet.

4. Bake for 15 minutes, flip the carrots, and then bake for another 15 minutes.


5. Allow to cool and enjoy.  Optionally, serve with Tzatziki sauce.

Recipe: Easy Morocon Chicken Bites


Recipe: Easy Moroccan Chicken Bites
Ingredients:
  • 1.5 pounds of chicken breasts, sliced thinly
  • 4 Tablespoons olive oil
  • 1 teaspoon of tumeric
  • 1 teaspoon of coriander
  • 1 teaspoon of garlic powder
Directions
1. Mix the olive oil, turmeric, coriander, and garlic powder to create a marinade.

2. Marinade the chicken in the mixture for approximately 4 hours in the refrigerator.

3. Preheat the oven to 350-degrees.

4. Add the chicken in a single layer on a shallow cooking sheet. (Make sure that the cookie sheet has at least 1/2" sides so that excess liquid doesn't create a mess in your oven.)

5. Bake for 15 minutes, flip the chicken, and cook for another 15 minutes.

6. Allow to cool and enjoy.  Optionally, serve with jasmine rice, veggies, and Tzatziki sauce.
