Recipe: Pillsbury Funfetti Cookies for the 15.25 ounce Box of Funfetti Cake Mix

Recipe: Pillsbury Funfetti Cookies for 15.25 ounce Box of Funfetti Cake Mix
Did you notice that Pillsbury's cake mix is now 15.25 ounces instead of 18.9 ounces?  In today's post, I'll share my recipe where I fixed the ratio of ingredients to work with the smaller boxes.  (This is not a sponsored post. I bought some cake mix to make the cookies and then realized that the Pillsbury website uses the 18.9 ounce size box and had to figure out how to scale the recipe on my own.)

Ingredients

  • 1 box of the 15.25 ounce Pillsbury Funfetti Cake Mix
  • 1/4 vegetable oil
  • 2 eggs
Directions

1. Preheat the oven to 375.

2. Combine all of the ingredients and mix until the dough forms.

3. Roll the dough into 1" balls and place 2" apart on uncreased cookie sheets. Slightly flatten the cookies to 1/4" thickness.

4. Bake for 6 to 8 minutes or until edges are light golden brown. Be careful not to overcook them!

5. Cool 1 minute and remove from the cookie sheet.

6. Optional: Frost and/or add sprinkles or other toppings once the cookies cool.
