Recipe: Baked Purple, Yellow, and Orange Carrots
Ingredients:

  • 1 pound of Rainbow Carrots (Purple, Yellow, and Orange)
  • 3 Tablespoons of Olive Oil
  • Optional: Salt and Pepper to taste
Directions
1. Pre-heat the oven to 425-degrees.

2. Wash the carrots and slice them lengthwise into halves.

3. Either toss the carrots in olive oil or brush them with olive oil.

4. Optionally, sprinkle with salt and/or pepper.

5. Bake for 25 to 30 minutes.
