Recipe: Easy Mini Crepes with Hazelnut Spread and Bananas
Ingredients
Crepes:

  • 1 cup of all purpose flour
  • 2 eggs
  • 1/2 cup of milk
  • 1/2 cup of water
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 2 Tablespoons of butter


Filling:

  • 1 to 2 bananas (depending on your preferred thickness of the bananas in the mini crepes)
  • 1/4 cup of Hazelnut spread (or less - use your preferred amount)

Directions
1. Whisk the eggs.

2. Whisk the flour into the eggs.

3. Slowly stir in the milk and water.

4. Melt the butter in the microwave and then stir into the mixture.

5. Stir in the salt and cinnamon.

6. Heat the frying pan over medium heat. 

7. Lightly spray the frying pan with cooking spray or olive oil so that the crepes won't stick.

8. Pour 1/4 cup for each crepe, tilting the pan in a rotating circular motion to spread the batter and then cooke for approximately 2 minutes.  Flip and cook the other side for approximately 20 to 30 seconds.

9. Remove the crepe and allow to cool.  Cut into smaller pieces so that you are able to spread a small amount of Nutella in it and add one slice of banana.  Fold into rectangular shapes.

10. Spray the frying pan again and then add the mini crepes that you folded back to the frying pan and heat for approximately 30 seconds on each side or until golden brown spots appear.
