Ingredients
- 2 medium tomatoes
- 2 small/medium zucchini
- 2 cloves of garlic
- 1 Tablespoon of olive oil
Directions
- Chop zucchini into small pieces (approximately 1/4 inch thickness or to your preference).
- Dice the tomatoes.
- Warm the olive oil in the skillet over medium heat.
- Press the garlic and add it to the skillet, stirring until browned.
- Carefully add the diced tomatoes and chopped zucchini, stirring and flipping frequently until thoroughly cooked. This should only take approximately 5 minutes, but cook until your preference. (Pro tip: If the veggies start to brown, turn the heat lower.)
