The best part about this recipe is that it's truly easy - my secret is that I use the Krusteaz Honey Cornbread & Muffin mix and just add slices of hotdogs before baking them. Easy-peasy!
Recipe: Easy Corn Dog Mini Muffins for Game Day Parties
Ingredients
- 1 box of Krusteaz Honey Cornbread & Muffin Mix (15 ounces)
- 4 hotdogs
- 2/3 cup of milk
- 1/3 cup of vegetable oil
- 1 egg
Directions
1. Preheat the oven to 375-degrees.
2. Lightly grease or line the mini muffin pans
3. Cook the hotdogs and chop them into small pieces that match the height of your mini muffin pan. (You may cut them short if you prefer for them to be completely covered by the cornbread.)
4. Stir together the milk, oil, egg, and full box of cornbread mix until blended.
5. Spoon batter into the mini muffin pan so that they are approximately 1/2 to 2/3 full. (Remember that the hotdogs will take space.)
6. Add a piece of hotdog to each mini muffin.
7. Bake for 11 to 13 minutes, until light golden brown.
8. Allow to cool for approximately 5 minutes and then gently loosen and remove them from the pan.
