Recipe for Easy Mexican Street Corn
Ingredients
- 3 cups of frozen corn
- 1 teaspoon of butter
- 1/3 cup sour cream
- 1/3 cup mayonnaise
- 1 clove garlic, minced
- 2 teaspoons lime zest, from one lime
- 1 lime's worth of lime juice
- 2 Tablespoons chopped cilantro
- 1/4 teaspoon ground chili pepper, to taste
- 1/2 cup cotija cheese, crumbled
Directions
1. Create a sauce with the sour cream, mayonnaise, garlic, lime zest, and lime juice.
2. Melt the butter in a skillet over medium heat and cook the corn.
3. Mix the sauce into the corn and then add the cilantro and chili pepper to taste.
4. Stir in the cotija cheese.
5. Allow to cool slightly and optionally serve with lime wedges.
