- 1 package of gnocchi
- 1 Tablespoon of extra virgin olive oil
- 1 lemon, juiced
- 1 garlic clove, minced
- 1/2 cup mascarpone cheese
- 1/4 cup chopped basil
- 1/2 cup grated Parmesan
- 1/4 cup chopped pine nuts
- 1/4 teaspoon of salt
- 1/4 teaspoon of freshly grated pepper
- Optional: 2 Tablespoons of lemon zest
Directions
1. Add the olive oil to the skillet and heat over medium heat.
2. Cook the gnocchi and garlic in the skillet until lightly browned.
3. Stir the lemon juice, mascarpone cheese, Parmesan, pine nuts, salt and freshly grated pepper and then carefully pour into the skillet, frequently stirring frequently for approximately 15 minutes or until the sauce is thickened.
4. Sprinkle the chopped basil into the skillet and stir.
5. Allow to cool before serving.
