Recipe: Pumpkin Quinoa Soup

- 5 cups of pureed pumpkin
- 1/2 cup quinoa
- 2 carrots
- 4 cups chicken broth
- 1 cup red lentils
- 1 medium potato
- 4 Tablespoons of olive oil
- 5 medium cloves of garlic
- 1 medium yellow onion
- 1 teaspoon salt
- 1 Tablespoon black pepper
- 1 teaspoon of Tumeric
- 1 teaspoon Coriander
- 1 teaspoon of Paprika
- 1 teaspoon of Cumin
Directions:
- Saute chopped onions and garlic in olive oil in large stockpot using medium heat until onions begin to caramelize.
- Add chicken stock, pumpkin, chopped potatoes, chopped carrots, lentils, quinoa, and spices.
- Bring to boil. Reduce heat to low.
- Cover and simmer while occasionally stirring for 45 minutes or until lentils, carrots, and potatoes are soft.
