Recipe: Carribean Chicken and Pineapple Skewers
Ingredients:- 1 pound of chicken breast, chopped into small pieces for skewers
- 3 Tablespoons of olive oil
- 1.5 Tablespoons of a Citrus Seasoning Blend
- 1 small pineapple, chopped into small pieces for skewers
- Options: serve with rice and black beans
1. Prepare the marinade by mixing the olive oil andCitrus Seasoning Blend. Add the marinade to a plastic freezer bag with the chicken breast and mix well. Allow the chicken to marinate for a minimum of 2 hours.
2. Place the chicken and pineapple on skewers.
3. Grill over medium heat for approximately 10 minutes or until thoroughly cooked.
4. Allow to cool slightly and optionally serve with rice and black beans.
