Recipe: Easy Falafel Waffles

Ingredients

  • 1 15 ounce can of chickpeas, drained
  • 3 cloves garlic, pressed
  • 2 tsp. cilantro
  • 2 tbsp. chopped parsley
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 3 tbsp. all-purpose flour
  • 1/4 tsp. Kosher salt
  • 1/4 tsp. Freshly ground black pepper

Directions

1. Add all of the ingredients a food processor and pulse until the ingredients are thoroughly mixed and an even dough forms.

2. Refrigerate the mixture until you are ready to make the falafel waffles.

3. Spray the waffle maker with cooking spray.

4. Waffle maker sizes will vary, but you'll want to add approximately 1/3 cup of batter for each falafel waffle.

5. Cook until golden brown and thoroughly cooked.


6. Allow to cool and enjoy.  We love filling pitas with falafel waffles, tzatziki sauce, tomatoes, lettuce, and cucumbers!
